Fired Up by Quanto Basta

Quanto Basta is relatively new to the Portland food truck scene, but the style and service are thoroughly old world. Owner Elizabeth English draws on her experience cooking and living in Rome and the Campania region of Italy for her classic flavor inspirations. Plus, she sources from Maine farms seasonally to showcase fresh ingredients and local heritage. The name Quanto Basta is borrowed from the shorthand noted alongside the seasoning in Italian recipes that means ‘as much as you like.’ In English’s words, it’s a celebration of the authentic, unmeasured charm of Italian cooking.

I got to feature Quanto Basta at my recent client appreciation night and I can’t imagine a better fit for the occasion. For one thing, the food is AMAZING. The pizza is fired in custom ovens at 900 degrees with flavors that are both classic and distinctive – the perfect complement to spritzy beverages and autumn temperatures. The extra charm comes from the uber-cool food truck that’s a converted 1959 bus and from English’s over-the-top attention to detail and service.
